Bulani
Pronounce itBoo-lah-neeboo-LAH-nee
Thin Afghan flat pastry stuffed with choice of spring onions or potatoes or mix of both, sealed, and pan-fried until the crust blisters gold.
Bulani is the snack that becomes a tray. Dough is rolled thin, filled with chopped spring onion (or potatoes) and a little salt, then folded and fried in a shallow pan until the outside is crisp and the filling steams. You eat it in the hand, torn, often with a sharp chutney or a spoon of yogurt. It is not bread on the side of the meal. It is the thing people reach for first.
