Pronounce itMan-tooMAN-too
Steamed dumplindgs filled with spiced ground beed, finished with yogurt and split chickpeas (dal-nakhod) sauce.
Mantu is slow work: small squares of dough, a spoon of seasoned meat, pinched and steamed until the wrappers go tender. They arrive dressed — yogurt, a little tomato or split-chickpea sauce, mint. You do not eat them dry. They are the kind of dish that tells a table you meant it, because someone sat and folded every one.
